Although their long horns can be intimidating, Scottish Highland cattle are one of the most docile breeds. We chose their breed because we wanted to work with the land, not against it. Their thick wavy coats allow them to thrive during long Maine winters. Scottish Highlands are also not picky eaters; they graze native and wild plants other cows avoid. Highlands also produce less fat in their bodies because their thick shaggy coats provide insulation during rough climates; resulting in a lean, low cholesterol and flavorful beef.
